White Peach & Thyme Fizz
Slow fizz. Stone fruit. The smell of a warm afternoon.
Ingredients
- 50 ml Latitude 42 Vodka
- 30 ml white peach purée
- 15 ml thyme simple syrup
- 20 ml fresh lemon juice
- 1 egg white
- 60 ml soda water
Method
Shake & top. Serve in a Highball. Garnish with Thyme sprig + peach slice.
White peach purée: blend 2 ripe white peaches, strain. Thyme simple syrup: steep 3 thyme sprigs in warm 1:1 syrup, 15 min, strain.
The story
The Bellini — peach purée and Prosecco — was created by Giuseppe Cipriani at Harry's Bar in Venice in 1948, named for the pink glow in a Giovanni Bellini painting. It has been diluted by imitations ever since. This fizz reclaims the idea of peach-in-a-glass by using white peaches (sweeter, more perfumed, less acidic than yellow), a thyme syrup for herbal grounding, and a proper egg white to carry the aromas into a foam. The soda water replaces Prosecco's effervescence with something less sweet.
Tasting note
Pale gold with a pillowy foam cap. Stone fruit fragrance on the nose; thyme's herbal edge arrives mid-palate; the vodka is invisible but structural.
