Spring Negroni
A Negroni with a seasonal disposition.
Ingredients
- 40 ml Juliet Gin
- 30 ml Aperol
- 20 ml sweet vermouth (Dolin Rouge)
- 10 ml Luxardo cherry liqueur
- 1 dash orange bitters
Method
Stir. Serve in a Large rocks glass. Garnish with Orange twist + cherry.
The story
The Negroni was born from a count's dissatisfaction. Around 1919, Count Camillo Negroni walked into Florence's Caffè Casoni and asked bartender Fosco Scarselli to strengthen his Americano by replacing the soda with gin. What emerged was one of the most balanced cocktails ever created — bitter, sweet, and spirit-forward in equal measure. The Spring Negroni leans on Juliet Gin's cherry and lemon notes to lighten the Negroni's traditional gravity. Swap classic Campari for the lighter Aperol, keep the sweet vermouth but choose a lighter style, and add a splash of cherry liqueur that speaks directly to the gin's flavour profile. This is not a Negroni replacement. It's a spring cousin.
